Breakfast Sandwich

Good morning Bright Liners!

When I discovered Ezekiel tortillas, I also discovered an equally awesome English muffin that is 100% Bright Line approved! Yum!

Here’s a picture of everything I used in my breakfast this morning:

Prep time: 10 minutes

Ingredients for one serving:

  • 1/2 Food for Life English muffin
  • 0.5 oz cheese
  • 1 oz sliced ham
  • 1 egg

Directions:

  1. Weigh your English muffin half and be sure that it is 1 oz- I had to pick out some of the center of mine because it naturally weighed 1.5 oz
  2. Weigh out 1 oz ham or breakfast meat of your choice (remember: bacon is a no no)
  3. Weigh out .5 oz of cheese
  4. Place your weighed English muffin half in the toaster and toast
  5. While it’s toasting, cook your egg however you like and heat your breakfast meat on low heat in a pan with the cheese on top so it gets nice and melty
  6. Place your meat, cheese, and egg on top of your toasted English muffin and enjoy!

For my fellow coffee lovers:

This is how I divvied up my meal-

  • 1/2 Food for Life English muffin
  • 0.25 oz of cheese
  • 0.5 oz of ham
  • 1 egg
  • 2 tbsp of cream

This doesn’t sound like a lot, but it tasted all the same to me, and was just as filling! I broke up my cheese and placed it all around my meat so it melted more evenly.

As you can see, I cooked my egg over-easy, and it was delicious! Be sure to add 6 oz of fruit to your meal to complete your Bright Line breakfast! Have a wonderful day 🙂
