Broccoli Beef Stir-Fry

My mom and I have wanted to try stir fry for a while, and last night we finally did! We chose to do broccoli and beef, but honestly you could add whatever protein or veggies you want to this dish! This recipe yields about 3 servings.

Prep time: 15 mins

Ingredients:

  • 1/4 cup soy sauce
  • 1 clove minced garlic
  • 1 teaspoon ground ginger (divided)
  • 1/2 white onion
  • 1-2 head(s) of broccoli
  • 1 head cauliflower
  • 1 tablespoon sesame oil
  • 2 tablespoons rice vinegar
  • 1 pound thinly sliced beef
  • Sesame seeds (optional)
  • Olive oil spray

Directions:

  1. Prepare your cauliflower rice by steaming it in a large pan for about 5 minutes and set it aside once finished
  2. Spray a wok or large pan with olive oil spray and add your garlic and 1/2 of your ginger
  3. Add in your beef and cook until partially brown (half way done)
  4. Add in your broccoli and onions and cook for about 4 minutes, stirring often
  5. While it is cooking, mix together the sesame oil, soy sauce, rice vinegar, and the other 1/2 of your ginger
  6. Add this mixture to the pan and coat everything evenly
  7. Cook for another 5 minutes or until desired consistency of broccoli is reached (if you wish your broccoli to be less crunchy, cover everything with a lid so it is steamed)
  8. Measure out your individual serving and sprinkle with sesame seeds!

Ingredients for 1 serving:

  • 3 oz cauliflower rice
  • 3 oz broccoli & onions
  • 4 oz beef

When getting your individual serving, be sure to drain the excess liquid because that will throw off your measurements. Once you have everything measured, scoop some sauce from the bottom of the pan and pour it over everything! Everything in the sauce is a freebie 🙂

This meal really made my mom and I realize that we don’t need all of the extra sugar that’s usually used in Asian recipes! It had so much flavor and was super easy to make! We counted the sesame oil and seeds as our fat, so this meal really has everything you need for a perfect BLE-friendly dinner! I hope y’all enjoy!
